Chef Duffy's Guide to Food & Menu Costing

Inside this year's Restaurant Zone at the 2024 Bar & Restaurant Expo were a number of activations:

Led by Chef Brian Duffy and his team of chefs, a number of food demos and samples were also available in the Restaurant Zone.

We wanted to highlight an important takeaway from Chef Duffy—a guide to calculating the food cost and menu cost of all of the dishes sampled and demoed at the show.
