The interest in non-alcoholic options has grown tremendously in the last two years. Guests have now come to expect non-alc options on a menu that go beyond a simple soda or fruit juice.
But Dry January shines an even bigger spotlight on non-alc options, as even more consumers opt to drink less—or not at all—to start off the new year.
Consider making your non-alc section front-and-center on your menus this month. Here are some non-alc recipes to get you started.
Clarified Milk Punch
Ingredients:
4 cups strong Earl Grey Tea
I cup lemon juice
1 cup blood orange juice
1 cup hazelnut syrup-this could be more or less depending on how sweet you would like it.
1 cup whole milk
1 ¼ cup heavy cream
¾ cup hazelnut milk
Directions:
- In a large container (ideally a cambro), mix together the earl grey tea, lemon, blood orange juice and hazelnut syrup. Set aside.
- In a stove pot, combine the whole milk, heavy cream and hazelnut milk. Heat on medium until right before simmering
- Pour dairy mixture into another large container, then pour tea mixture into the milk mixture. This is important as it cannot be poured the other way around.
- Let sit in fridge for at least 2 hours, but up to 24 hours.
- Strain out the now curdled milk mixture through a nut milk bag or fine mesh strainer with cheesecloth.
- Serve over ice with orange slice as garnish.
Peach Highball
Ingredients:
2 oz N/A bourbon ( we used Spiritless Kentucky 74)
3/4 oz peach puree (Real brand peach puree infused syrup)
1/2 oz lemon juice
Soda water
Directions:
- Add all ingredients into a shaker. Shake well with ice.
- Strain into tall glass with ice, and top with soda water.
- Garnish with lemon.
Café au Chai Mocktail
Recipe: Guinness
Ingredients:
2 oz Guinness Zero
1.5 oz Seedlip Spice 94
0.5 oz Seedlip Grove 42
1.0 oz Grady’s Cold Brew
0.75 oz Simple Syrup
1 oz Tazo Chai Latte
Espresso beans
Directions:
- Build in tin with ice, stir, shake & strain into a coupe glass.
- Garnish with espresso beans.
Kamasutra
Ingredients:
2 oz Passion fruit juice
2 oz Green tea
1 oz Ginger syrup
½ oz Lemon juice
½ oz Rose syrup
1 oz Tonic water
½ oz Seeds
3 Mint Leaves
Cherry
Directions:
- In a Cognac glass, add ice then add passion fruit juice, green tea, ginger syrup and lemon juice.
- Fill with tonic water and add seeds to the top.
- Garnish with mint leaves and a cherry.
Pistachio Dream
Ingredients
13 oz. Monin Pistachio Syrup
4 oz. Monin Honey Organic Sweetener
10 oz. fresh lemon juice
1 1/2 qt. fresh pressed orange juice
1 1/2 qt. coconut water
Directions:
- Pour ingredients into suitable mixing container in order listed.
- Whisk well to mix.
- Portion into appropriate storage container(s).
- Cover, label, day dot, and store refrigerated.
Rosemary Blueberry Smash
Ingredients:
7-8 blueberries muddled
1 oz of honey syrup
1 oz fresh lemon juice
4 oz sparkling mineral water
Rosemary sprig
Directions:
- Combine all ingredients except mineral water.
- Top with 4 oz of sparkling mineral water and rosemary sprig.
Blood Orange Ginger Spiced
Ingredients:
2 oz Blood orange juice
1/2 oz Fresh squeezed lemon juice
1/4 oz Simple syrup
2 oz Ginger beer
Orange slices
Directions:
- Add the first 3 ingredients to a shaker tin with ice
- Lightly shake
- Strain into Rocks Glass over fresh ice
- Top with ginger beer
- Stir contents lightly
- Garnish: 1 orange wheel wedged in between the glass and the ice, partially sticking out.
