Pump Up The Jams

Ingredients:

150 oz Legent Bourbon

750 g Creamy Peanut Butter

2500 g Fresh Blueberries

1650 ml Fresh Lemon Juice

1200 ml Simple Syrup

100 oz Whole Milk

Directions:

Prepare the Blueberry Purée:

  1. Place 2500g of fresh blueberries into a blender and blend until smooth.
  2. Strain the purée through a fine mesh strainer or cheesecloth to remove any solids, resulting in smooth blueberry juice. Discard the solids.

Mix Peanut Butter and Blueberry Juice:

  1.  In a large mixing bowl, combine 750g of creamy peanut butter with the strained blueberry juice.
  2.  Stir thoroughly to ensure the peanut butter is fully incorporated into the blueberry juice. This mixture will be thick and creamy.

Incorporate Bourbon and Simple Syrup:

  1. Gradually add 150oz of Legent Bourbon to the peanut butter-blueberry mixture, stirring continuously to combine. The mixture will begin to loosen up.
  2. Add 1200ml of simple syrup to the mixture and stir well to ensure everything is fully blended.

Add Lemon Juice for Clarification:

  1. Slowly pour 1650ml of fresh lemon juice into the bourbon mixture while stirring gently. The acidity from the lemon juice will cause the mixture to begin curdling, forming curds that help trap the solids.

Introduce the Cold Milk:

  1. Gradually add 100oz of whole milk to the curdling mixture. Continue to stir gently. The milk will react with the lemon juice, creating further curds that aid in the clarification process.

Allow the Mixture to Rest:

  1. Cover the mixture and let it sit undisturbed at room temperature for at least 30 minutes to 1 hour. This resting period is crucial for the curds to fully form and for the liquid to begin separating from the solids.

Initial Straining:

  1. Set up a large container with a fine mesh strainer or cheesecloth. Slowly and carefully pour the mixture through the strainer, allowing the clarified liquid to pass through while the curds and solids remain in the strainer.

Secondary Filtration:

  1. For a clearer final product, you may opt to pass the strained liquid through a coffee filter or another layer of fine cheesecloth. This step ensures the removal of any remaining fine particles.

Collect the Clarified Milk Punch:

  1. Use a funnel if necessary to transfer the clarified liquid into a clean container or bottle for storage. Ensure the container is properly sealed.

Chill and Serve:

  1. Refrigerate the clarified milk punch for several hours to chill before serving.
  2. Serve 4oz of  milk punch over ice in a chilled glass.
