World Gin Day is June 10, and your bar/restaurant should create a menu bursting with botanicals to celebrate the spirit. Gin is also perfect in refreshing summer cocktails that focus on vegetal or fruit flavors!

Bees Knees
Ingredients:
1 1/2 oz. gin
3/4 oz. The Perfect Purée White Peach Puree, thawed
1/2 oz. lemon juice
3/4 oz. ginger honey syrup
Directions:
Add all ingredients with ice into shaker. Shake and strain into glass with fresh ice. Garnish with flower petals.
Manchuria
Ingredients:
1 1/2 oz. Bombay Sapphire Gin
1 oz. The Perfect Purée Mango Puree, thawed
1/8 oz. The Perfect Purée Ginger Puree, thawed
2 oz. kombucha
3/4 oz. lime juice
3/4 oz. simple syrup
Directions:
In a cocktail shaker combine all the ingredients with ice, shake and serve in a tall glass. Serve over the rocks with volcanic black salt and lime peel.
Mulled Gin Sour
Ingredients:
1.75 oz Spring 44 Gin
.75 oz Fresh Lemon Juice
.25 oz Yellow Chartreuse
.5 oz Spiced Dram Syrup
1 Egg White
Mulled wine
Directions:
Dry shake with mint. Wet shake. Double strain into a coupe glass. Garnish with basil leaf and a float of mulled wine.
Forgotten Borough Sour
Ingredients:
1 oz Old Duff Genever
½ oz Angostura Bitters
½ oz Del Maguey Chichicapa Mezcal
1 oz Acid Adjusted Pineapple Juice (pina->lime)
½ oz Demerara Syrup
Egg White
Garnish: 3 Peychaud & 3 Toasted Sesame Oil Petals
Directions:
Add all ingredients to a small tin, starting with egg white. Dry shake, add ice, and shake vigorously. Double strain into a chilled egg coupe. Drop Peychaud & Sesame Oil in alternating drops, then draw bamboo skewer through drops to create petals.
Blue Lavender Gin Fizz
Ingredients:
2 oz. gin
3/4 oz. Monin Lavender Syrup
1 oz. pasteurized egg white
3/4 oz. fresh lemon juice
2 pump(s) Monin Blueberry Concentrated Flavor
Garnish: blueberries, lavender sprig
Directions:
Combine ingredients in shaker in the order listed, except sparkling beverage. Cap and shake vigorously. Strain into chilled Collins glass. Top with sparkling beverage. Garnish with blueberries and lavender sprig.
