Dinner is Only the Beginning: Mayfair Supper Club Gambles on Eatertainment

An entirely new nightlife concept in Las Vegas is making a bold promise: “Dinner is only the beginning.”

Not much—if anything—is left to chance by Vegas nightlife operators. Calculated risks tend to favor the house, so to speak.

So, when nightlife leaders gamble on something in America’s Playground, operators around the world should sit up and take note.

MGM Resorts International is rolling the dice on eatertainment at one of the world’s premier luxury travel destinations. The Bellagio will soon be home to “dinnertainment” concept The Mayfair Supper Club.

The Mayfair replaces Hyde, an upscale lounge with which veteran Nightclub & Bar Show attendees are familiar. However, Hyde’s successor won’t simply go under a chic scalpel, putting a new face on the standard luxe ultra-lounge.

Rather, MGM Resorts and the Bellagio seek to change nightlife at a level far deeper than skin deep. We spoke with Sean Christie, President of Events and Nightlife at MGM Resorts International, about his vision for ushering in the next evolution in nightlife and hospitality.

What changes to nightlife and consumer behavior informed the decision to create a venue purpose built as a “dinnertainment” venue?

Consumers tastes constantly change—they are changing as we speak. What was popular in the past doesn’t resonate as much with the guest of today. There is a whole new segment of people who are looking for something different and more sophisticated—fun experiences with less barriers to entry. We believe this will be accomplished with The Mayfair Supper Club.

What challenges were encountered and overcome when designing a venue to serve as an all-in-one dining and nightlife experience?

The biggest challenge relates to the different meal periods and how the entertainment will integrate with the tempo of the evening. If we do a good job it should feel like a natural arc to the experience where a guest can dine, observe, participate, and still feel like they are in an upscale dining room overlooking the most iconic landmark in Las Vegas, the Bellagio Fountains.

Are there key design elements of which the Mayfair is particularly proud?

We are most proud of the layering that renowned designer Martin Brudnizki and his team have created for the venue. The Mayfair is the type of place where the more you come back, from a design perspective, the more you will discover. They also did a fantastic job of incorporating the fountains into the dining room through locational proximity and design elements that connect the attraction to the guest experience now more than ever.

How has the management team and staff been prepared to deliver a guest experience that evolves as the evening progresses?

This is ongoing and will be a work in progress as the consumer reveals their desired preferences. The key is to listen, stay nimble, make changes, and evolve as we move forward to consistently present fresh and fun content throughout the dining experience. We are all committed to working as a team to deliver the promise that Bellagio has set forth to “WOW” our guests.

How will The Mayfair Supper Club redefine “dinner and a show” as a modern, forward-thinking dinnertainment concept?

There is nothing like The Mayfair in Las Vegas. The concept blurs the “dinner and a show” lines by blending multiple experiences into one: Amazing food, first-class service, engaging entertainment, and most importantly, fun! A guest can visit The Mayfair multiple times and have a different experience during each trip. We feel this is what will keep guests returning time and again.

What can guests expect from the food program at the Mayfair Supper Club?

The culinary program will pay homage to American classics and the supper club experience of eras past. The food will be Contemporary American with offerings such as prime rib—served tableside—seafood towers, sushi, pasta, salads, and lavish desserts.

What can guests expect from the beverage program?

First and foremost, the program’s backbone is quality. From fresh juices, housemade syrups, tinctures and bitters, a cocktail is only as good as the quality of its ingredients. The program will give a nod to the paradigm classics of when Sinatra and Martin ran this town—Manhattans, Martinis and Old Fashioneds will be available—along with reimagined favorites. The cocktails not only will entice the palate but engage all of the senses—visually pleasing elements such as carefully crafted garnishes made of flowers and cotton candy, plus exquisite glassware, will be highlights of each libation.

Are there special food and beverage items of which the Mayfair is particularly proud?

The tableside presentations are really special. A table captain will greet guests with a roving cart and serve select dishes, such as prime rib and cherries jubilee. We also have a selection of eye-catching cocktails that are sure to surprise and delight (get your smartphone ready!). Bellagio’s F&B team is known for their attention to detail, which in turn delivers memorable moments. We think guests will truly enjoy what we have in store.

A key component of eatertainment concepts is entertainment. What forms of entertainment will be available at The Mayfair?

The Mayfair will integrate many forms of entertainment: live music, performing arts, visual arts, such as digital media technology and more. All aspects of the entertainment—from the creative group developing the show to the talented performers and production leads—includes an all-star team that will give guests a one-of-a-kind experience that is not available anywhere else on The Strip. We are thrilled to bring together industry leaders from a variety of entertainment verticals to deliver a new and exciting supper club experience.
